Cookout Potato Salad Recipe - This is a simple fast potato salad recipe for your next backyard bbq or patio cookout. The base recipe is infinitely variable, but the Dijon mustard and the horseradish add those subtle extra flavours that will keep people coming back for more.Ingredients:3 eggs, hard boiled600g baby potatoes15 - 30 mL (1 to 2 Tbsp) horseradish3-4 green onions, thinly sliced1 rib celery, thinly sliced4-5 radishes, thinly sliced75 mL (1/3 cup) mayonnaise15 - 30 mL (1 to 2 Tbsp) Dijon mustard5 - 10 mL (1-2 tsp) dry hot mustard powder2 mL (½ tsp) celery seeds30 mL (2 Tbsp) plain yogourt or sour cream15 - 30 mL (1 to 2 Tbsp) vinegarSalt and pepper, to tasteMethod:Hard boil, and the cool the eggs.Cut up the potatoes into fork size bites, and boil until tender with the horseradish in salted water.When cooked, drain the potatoes and season with salt and pepper, allow to cool.Combine the dressing ingredients; mayo, Dijon, dry mustard, celery seeds, sour cream, and vinegar.Slice up the hard boiled eggs.Combine the potatoes, sliced veg, dressing, and eggs until evenly coated.Place in the fridge a couple hours before serving.#LeGourmetTV #GlenAndFriendsCooking
