CORN BREAD WITH THYME STREUSEL

Ingredients

¾ cup corn kernels, boiled and crushed
85 grams polenta
185 grams refined flour (maida) + for dusting
150 grams castor sugar
1 teaspoon baking powder
2 eggs
1 teaspoon vanilla essence
212 ml buttermilk
Butter for greasing
Dried thyme for topping
Streusel
2 tablespoons refined flour (maida)
100 grams unsalted butter, chilled and cut into cubes
¼ cup corn kernels, boiled and crushed

Method

1. Preheat oven to 160° C.
2. Sift together 185 grams flour, polenta, castor sugar and baking powder in a bowl.
3. Break eggs in another bowl. Add vanilla essence and buttermilk and whisk well.
4. Add egg mixture into flour mixture and whisk. Add corn kernels and whisk. Add butter and whisk well.
5. Grease a loaf tin with some melted butter and dust with some flour. Pour the batter and level it out. Set aside.
6. To make streusel, mix together 2 tablespoons flour and butter in another bowl till the mixture resembles breadcrumbs. Add corn kernels and mix well.
7. Sprinkle the prepared streusel over the batter and top with thyme.
8. Put the tin in the preheated oven and bake for 1 hour. Remove from oven, cool and demould.
