This beautifully vibrant yellow and green hued rice preparation is definitely going to be a show stopped at your next party!

CORN PALAK PULAO

Ingredients

1 cup sweet corn kernels
1¼ cups blanched spinach puree
1½ cups Daawat Pulav Basmati Rice
2 tbsps ghee
2 tsps oil
1 tsp cumin seeds
2-3 green chillies, slit
2 medium onions, sliced
1 tbsp ginger-garlic-green chilli paste
A pinch of turmeric powder
Salt to taste
¼ tsp garam masala powder
2 tsps lemon juice
Burnt garlic raita to serve
Papads to serve

Method

1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times, add fresh water, soak for 20 minutes and drain.
2. Heat ghee and oil in a deep pan, add cumin seeds and let them change colour. Add green chillies and onions and sauté till translucent.
3. Add ginger-garlic-green chilli paste and sauté for 1-2 minutes. Add sweet corn, mix and sauté on high heat for 1-2 minutes or till the sweet corn turns golden brown.
4. Add turmeric powder and spinach puree and mix well. Add salt, mix and cook for a minute.
5. Add soaked rice, mix and add garam masala powder and lightly mix. Add 2 cups hot water, mix and cook on high heat for 5-6 minutes. Reduce the heat to low and cook for 4-5 minutes more.
6. Switch the heat off and add lemon juice, gently mix and transfer into a serving plate. Serve hot with burnt garlic raita and papads.
