This beautifully vibrant yellow and green hued rice preparation is definitely going to be a show stopped at your next party!CORN PALAK PULAOIngredients1 cup sweet corn kernels1¼ cups blanched spinach puree 1½ cups Daawat Pulav Basmati Rice 2 tbsps ghee2 tsps oil1 tsp cumin seeds2-3 green chillies, slit2 medium onions, sliced1 tbsp ginger-garlic-green chilli pasteA pinch of turmeric powderSalt to taste¼ tsp garam masala powder2 tsps lemon juiceBurnt garlic raita to servePapads to serveMethod1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times, add fresh water, soak for 20 minutes and drain. 2. Heat ghee and oil in a deep pan, add cumin seeds and let them change colour. Add green chillies and onions and sauté till translucent. 3. Add ginger-garlic-green chilli paste and sauté for 1-2 minutes. Add sweet corn, mix and sauté on high heat for 1-2 minutes or till the sweet corn turns golden brown. 4. Add turmeric powder and spinach puree and mix well. Add salt, mix and cook for a minute.5. Add soaked rice, mix and add garam masala powder and lightly mix. Add 2 cups hot water, mix and cook on high heat for 5-6 minutes. Reduce the heat to low and cook for 4-5 minutes more.6. Switch the heat off and add lemon juice, gently mix and transfer into a serving plate. Serve hot with burnt garlic raita and papads.
