3 Course Vegan Meal For Meat Lovers Eatbook 3-Course EP 13

Savory Soya Milk sauce with You Tiao and Chilli Oil
For the sauce:
100ml Nutrisoy Soya Milk (No Sugar Added)
1 tsp chilli oil
1 tsp deep fried shallots + oil
2 tsp sesame oil
2 tsp chinese black vinegar
2 tsp soya sauce

1. Add vinegar, sesame oil, Chinese black vinegar into an empty bowl
2. Warm up soya milk in a pot
3. Ladle soya milk into bowl of condiments
4. Top with chilli oil and garnish with deep fried shallots and oil

For the You Tiao:
2 frozen prata

1. Cut frozen prata into even strips
2. Place 2 strips on top of one another and pan fry them until puffy

Soya Milk Hotpot with Vegan Meatballs
For the meatballs:
300g silken tofu
100g shiitake mushrooms
1 cup bread crumbs
onions (diced)
All spice, to taste
Soya sauce, to taste
Sesame oil, to taste
Garlic powder, to taste
Ginger powder, to taste

1. Blend silken tofu and shitake mushrooms in a food processor
2. Season the mixture with salt and pepper, add all other ingredients and thoroughly mix it
3. Hand-mould them into balls and glaze with soy sauce
4. Add it into the pot while it is simmering

For the broth:
500ml Nutrisoy Soya Milk (No Sugar Added)
3 kombu dashi sachets
1 tbsp red miso

Toppings:
Enoki mushrooms
Shimeji mushrooms
Shiitake mushrooms
Napa cabbage
Tofu
Daikon
Carrots
Konjac noodles

1. In a large pot, add soya milk and kombu dashi
2. Turn heat on to medium and let it simmer for 5 minutes before removing the kombu dashi sachets
3. Add in red miso and stir until well combined
4. Place toppings in a pot and cover it with broth
5. Bring your hot pot to a simmer and serve when the ingredients are cooked

Black Sesame and Soya Milk Pudding
600ml Nutrisoy Soya Milk (Reduced Sugar)
cup coconut cream
cup sugar
2 tsp agar agar powder
2 tbsp black sesame paste

1. Combine soya milk, sugar and agar agar in a saucepan
2. Turn on the heat and stir continuously to avoid burning the soya milk mixture
3. Bring the soymilk to a rolling boil, turn down the heat and continue stirring for 1 minute
4. Take mixture off the heat
5. Flavour the soya milk mixture with coconut cream and stir until well combined
6. Sieve your soya milk mixture into your glass (only filling up half of the glass to form one layer)
7. Add your black sesame paste into your remaining soya milk mixture and stir until well combined
8. Ensure your soya milk mixture is set before pouring in your black sesame mixture
9. Pour in your black sesame mixture on top of your soya milk mixture (to form the second layer)
10. Refrigerate until ready to serve
