* ingredients (15~20 croquettes)

250g crab meat, 1 onion, 120g unsalted butter, 100g flour, 600ml milk, taste with salt and pepper
flour, 1~2 eggs(lightly whisked), bread crumbs, oil to fry

Chop the onion and crabmeat to shred. add the buteer(2~3Tbs) to a frying pan and melt it.
add chopped crab, onion and fry it. add salt and pepeer and mix.
another pan, add the butter(120g) and melt it. add the flour little by little in 4 to 5 portions.
butter and flour and mix well. add the milk, little by little.
when all the milk has been added, the sauce should be thick like this.
add the fried crabmeat, onion and taste with salt & pepper.
pour the sauce into a square pan with plastic warp. chill well in the refrigerator.
If the cream filling is soft it will become easy to handle after about an hour in the refrigerator.
When it's cooled and easy to handle, score the surface into 15 to 20 portions.
coat flour, eggs and bread crumbs and fry it until it gets golden.
