Crab Stuffed Mushrooms | Sanjeev Kapoor Khazana

Mushrooms stuffed with crab meat and cheese mixture coated with batter and deep fried.

CRAB STUFFED MUSHROOMS

Ingredients

¾ cup crab meat
12-16 button mushrooms, stems removed
½ cup grated gruyere cheese
½ cup grated mozzarella cheese
1-2 stalks, spring onion greens, chopped
1-2 fresh red chillies, chopped
Salt to taste
Crushed black peppercorns to taste
¼ cup refined flour + for dusting
4 tablespoons milk + as required
Panko for coating
Oil for deep-frying

Method

1. Mix together crab meat, gruyere cheese, mozzarella cheese, spring onion greens, fresh red chillies, salt and crushed peppercorns in a bowl.
2. Add flour and milk and mix well.
3. Stuff the mushroom caps with the prepared crab meat mixture.
4. Spread panko on a plate and add parsley, mix well. Spread flour on an individual plate. Pour some milk in a bowl.
5. Heat sufficient oil in a pan for frying.
6. Dust the stuffed mushrooms with flour, dip in milk and coat with the panko mixture.
7. Deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
8. Serve hot.
