Crab with Green Curry | Sanjeev Kapoor Khazana

Crab pieces cooked in freshly ground green masala curry. A must try !

CRAB WITH GREEN CURRY

Ingredients

3-4 medium crabs, cleaned
½ cup crab leg meat
1 black cardamom
1 teaspoon cumin seeds
3-4 cloves
3-4 green cardamoms
1 inch cinnamon
1 bay leaf
1 teaspoon poppy seeds
1 medium onion, sliced
½ cup fresh scraped coconut
2-3 green chillies
4-6 garlic cloves
1 inch ginger
4 tablespoons chopped coriander
Juice of ½ lemon
Salt to taste
1 tablespoon oil
1 medium onion, finely chopped
3 tablespoons coconut milk
1 teaspoon garam masala powder

Method

1. To prepare green curry, heat a non-stick pan. Add black cardamom, cumin seeds, cloves, green cardamoms, cinnamon and torn bay leaf and roast till fragrant. Add poppy seeds and sauté for half a minute. Remove from heat and transfer onto a plate.
2. Heat a non-stick pan. Add sliced onion and sauté till golden. Add coconut and sauté till golden. Remove from heat and add to the roasted spice mixture. Add broken green chillies, garlic and ginger.
3. Grind together the roasted spice-onion-coconut mixture and chopped coriander alongwith salt and some water to a fine paste.
4. Take crabs in a bowl. Add lemon juice and salt and mix well.
5. Heat oil a non-stick pan. Add chopped onion and sauté till golden.
6. Grind the crab leg meat alongwith some water to a fine paste.
7. Add the ground paste to the onion, mix and sauté for a minute. Add crab meat, mix, cover and cook for a minute. Add some water and strained crab leg mixture, mix, cover and cook on low heat for 15-20 minutes.
8. Add coconut milk and garam masala powder and mix well.
9. Serve hot.
