It's time to make the best use of fresh beets. Try this creamy and beautiful soup and soothe yourself in this chilly mausam.
CREAM OF BEETROOT SOUP

Ingredients

½ cup fresh cream + for garnish
2 medium beetroot, peeled and roughly chopped
1 tbsps olive oil + for garnish
1 bay leaf
4-5 black peppercorns
2 tsps celery chopped
1 inch ginger, roughly chopped
5-6 garlic cloves
1 medium onion, chopped
2-3 green chillies, chopped
Salt to taste
2 tsps butter
Crushed black pepper to taste
Croutons for garnish
Dill leaves for garnish

Method

1. Heat olive oil in a pan, add bay leaf, black peppercorns, celery, ginger, garlic and onions, sauté till onions are translucent.
2. Add beetroot, green chillies and salt, sauté for 2-3 minutes. Add 2-3 cups water, cover and cook until the beetroot is completely cooked.
3. Discard the bay leaf and blend to a fine puree. Add butter, crushed black pepper and fresh cream, switch the flame and mix well.
4. Serve hot, drizzle some cream, garnish with croutons and dill leaves.
