Creamy Asparagus Soup Sanjeev Kapoor Khazana

When someone says a creamy soup, usually a mushroom or broccoli comes to mind. Then you must add another soup to your list of creamy soups. This ones made from asparagus.

CREAMY ASPARAGUS SOUP

Ingredients

30-40 asparagus stalks
Boiled asparagus spears for garnish
4 tsps olive oil
4 tsps butter
2 bay leaves
4 tsps chopped garlic
2 medium white onions, chopped
Salt to taste
4 cups vegetable stock
2 tbsps fresh cream + to drizzle
Parmesan shavings for garnish
Crushed black peppercorns to sprinkle

Method

1. Chop the asparagus roughly.
2. Heat olive oil and butter in a deep pan. Add bay leaf, garlic and saut for 30 seconds.
3. Add onion and saut till translucent.
4. Add chopped asparagus, salt and saut for a minute.
5. Add vegetable stock and mix well. Once the mixture comes to a boil, lower the heat and cook for 10-15 minutes.
6. Grind to fine mixture with the help of a hand blender. Cook for 2-3 minutes.
7. Add fresh cream and mix well.
8. Transfer in a serving bowl, garnish with parmesan shavings, drizzle fresh cream, sprinkle crushed peppercorns, place asparagus spears and serve hot.
