Chicken breast marinated with basil, garlic and spices crumb coated and deep fried serve with a cheese sauce.CREAMY BASIL CHICKENIngredients4 chicken breasts1 tablespoon chopped garlicSalt to taste1 tablespoon pesto1 cup panko breadcrumbs1 teaspoon red chilli flakesCrushed black peppercorns to taste1 eggOil for deep-frying4-6 cherry tomatoes, halvesA fresh coriander leaf for garnishingCreamy pesto sauce1½ tablespoons butter1 tablespoon refined flour1 cup milk½ teaspoon red chilli flakesSalt to taste1 teaspoon pestoMethod1. Take chicken in a bowl. Add garlic, salt, crushed peppercorns and pesto and mix well. Set aside to marinate for 30-45 minutes.2. Take breadcrumbs in a shallow plate. Add chilli flakes, crushed peppercorns and salt and mix well.3. Break an egg in marinated chicken and mix well.4. Coat each marinated chicken breast with breadcrumbs. 5. Heat sufficient oil in a pan.6. To prepare creamy pesto sauce, heat butter in a non-stick pan. Add flour and sauté for 30 seconds. Add milk, mix and cook till it thickens. 7. Add chilli flake and salt and mix. Add parmesan cheese and mix. Switch off heat, add pesto and mix well. 8. Deep-fry prepared chicken breasts in hot oil till golden and crisp. Drain on absorbent paper.9. Put some cheery tomatoes on one side of a serving platter and garnish it with a coriander leaf.10.
