Creamy Basil Chicken | Sanjeev Kapoor Khazana

Chicken breast marinated with basil, garlic and spices crumb coated and deep fried serve with a cheese sauce.

CREAMY BASIL CHICKEN

Ingredients

4 chicken breasts
1 tablespoon chopped garlic
Salt to taste
1 tablespoon pesto
1 cup panko breadcrumbs
1 teaspoon red chilli flakes
Crushed black peppercorns to taste
1 egg
Oil for deep-frying
4-6 cherry tomatoes, halves
A fresh coriander leaf for garnishing
Creamy pesto sauce
1½ tablespoons butter
1 tablespoon refined flour
1 cup milk
½ teaspoon red chilli flakes
Salt to taste
1 teaspoon pesto

Method

1. Take chicken in a bowl. Add garlic, salt, crushed peppercorns and pesto and mix well. Set aside to marinate for 30-45 minutes.
2. Take breadcrumbs in a shallow plate. Add chilli flakes, crushed peppercorns and salt and mix well.
3. Break an egg in marinated chicken and mix well.
4. Coat each marinated chicken breast with breadcrumbs.
5. Heat sufficient oil in a pan.
6. To prepare creamy pesto sauce, heat butter in a non-stick pan. Add flour and sauté for 30 seconds. Add milk, mix and cook till it thickens.
7. Add chilli flake and salt and mix. Add parmesan cheese and mix. Switch off heat, add pesto and mix well.
8. Deep-fry prepared chicken breasts in hot oil till golden and crisp. Drain on absorbent paper.
9. Put some cheery tomatoes on one side of a serving platter and garnish it with a coriander leaf.
10. Slice and serve hot with creamy pesto sauce.
