Creamy Bruschetta Sanjeev Kapoor Khazana

Bruschetta with Oriental and European ingredients, but global in appeal. This creamy spread is bursting with refreshing flavours and is a great appetiser.

CREAMY BRUSCHETTA

Ingredients

cup cream cheese
8 brun pav slices
cup mayonnaise
cup finely chopped spring onion greens
cup finely chopped spring onion bulbs
Salt to taste
Crushed black peppercorns to taste
tsp red chilli fakes
1 tsp chopped fresh parsley
Butter for toasting
Arugula leaves as required
Halved yellow baby tomatoes as required
Quartered cherry tomatoes as required
Red radish slices as required
Roasted and halved almonds as required
Balsamic reduction to drizzle
Crumbled feta cheese as required

Method

1. Take cream cheese in a bowl and cream well till smooth. Add mayonnaise and mix well.
2. Add spring onion greens, spring onion bulbs, salt, crushed black peppercorns, red chilli flakes, parsley and mix well.
3. Heat a nonstick tawa. Add butter and place the bread slices. Cook on medium heat for 2-3 minutes or till they turn golden brown and crispy.
4. Flip and cook on other side for 2-3 minutes more.
5. Transfer on a plate and apply the prepared spread evenly.
6. Arrange arugula leaves and yellow baby tomatoes and cherry tomatoes on top.
7. Arrange red radish slices and roasted almonds on top.
8. Drizzle balsamic reduction on top and sprinkle crumbled feta cheese on top
9. Arrange on a serving plate and serve.
