Creamy Cajun Chicken Spaghetti Sanjeev Kapoor Khazana

The best of American and Italian! Spaghetti tossed in a creamy, Cajun-spiced sauce and finished with a slice of chicken breast on top. A classy meal is ready.

CREAMY CAJUN CHICKEN SPAGHETTI

Ingredients

4 tbsps Cajun spice mix
4 boneless chicken breasts
400 grams cooked spaghetti
Salt to taste
4 tsps butter
2 tsps olive oil
2 tsps refined flour (maida)
1 cup milk
1 tbsp parmesan chese powder
2 tbsps grated processed cheese
2 tbsps fresh cream
Micro greens for garnish

Method

1. Heat 2 tsps butter and olive oil in a non-stick shallow pan.
2. Take chicken breasts on a plate. Sprinkle salt and 3 tbsps Cajun spice mix and rub the mixture well on both sides of the chicken.
3. Place the chicken breasts on the hot pan and cook on high heat for 2-3 minutes. Flip and cook the other side for 2-3 minutes as well. Reduce the heat to medium and cook till done.
4. Place the chicken breasts on to a worktop. Thickly slice each chicken breast.
5. Heat remaining butter in the same pan. Add refined flour and saut till fragrant.
6. Add milk and mix well. Cook for 1-2 minutes.
7. Add remaining Cajun spice mix and salt and mix well. Cook till the mixture thickens.
8. Add the spaghetti and mix well.
9. Arrange a portion of the spaghetti on a serving plate. Place a chicken breast on it and garnish with micro greens. Serve hot.
