CREAMY CHICKEN CASSEROLE - (Serves - 4)Ingredients1 cup grated processed cheese450 grams boneless chicken, cut into 1 inch cubes 2 tablespoons oil1 medium onion, finely chopped 8-10 button mushrooms, sliced 1½ teaspoons Dijon mustard ½ cup chicken stock Salt to taste Method1. Preheat oven at 180ºC. 2. Heat oil in a non-stick pan. Add onion and sauté well.3. Add chicken, mix and cook for 3 minutes. Add mushrooms, mix and cook for 2 minutes.4. Add mustard, mix well and cook. Add chicken stock and salt, mix and cook till semi-dry.5. Transfer the mixture into a glass baking dish and top with cheese.
