क्रीमी ग्रीन पीज पास्ता | Creamy Green Peas Pasta | Sanjeev Kapoor Khazana

Pasta tossed in creamy green sauce made using green peas, topped with cheese, is something you cannot resist. The fresh soothing colour of this pasta will catch your eyes.

CREAMY GREEN PEAS PASTA

Ingredients

1½ cups green peas
¼ cup blanched green peas
1½ cups penne pasta, boiled and drained
4 tbsps olive oil
1 tbsp + 1 tsp finely chopped garlic
1 medium white onion, finely chopped
Sea salt to taste
1¼ cups milk
Crushed black peppercorns to taste
Salt to taste
2½ tbsps parmesan cheese powder + for garnish
Fresh mint sprigs for garnish

Method

1. Heat 2 tbsps olive oil in nonstick wok, add 1 tbsp garlic and sauté for 30 seconds. Add onion mix, and cook till translucent.
2. Add green peas, sauté on high heat for 1-2 minutes. Add sea salt and mix well.
3. Stir in the milk and let the mixture come to a boil. Reduce the heat to low and cook till green peas soften. Switch the heat off and allow the mixture to cool slightly.
4. Transfer the mixture into a blender jar and blend to a fine paste.
5. Heat remaining olive oil in another nonstick pan. Add remaining garlic and sauté for a minute. Add in the blanched green peas and sauté for 1 minute.
6. Add boiled pasta and mix well. Reduce the heat to low and add the blended paste. Mix till well combined and cook for 1 minute.
7. Add crushed back peppercorns, salt, and parmesan cheese powder and mix well. Cook for 1-2 minutes and take the pan off the heat.
8. Transfer the creamy green peas pasta into a serving plate, garnish with crushed black peppercorns, parmesan cheese powder and mint sprigs. Serve hot.
