Crispy Aloo Tikki Recipe | Aloo Tikki stuffed with chana dal | Aloo tiki chaat with secret masala | कुरकुरी आलू टिक्की

Tikki
• Boiled Potato – 4
• Corn flour – 4 tbs
• Salt as per taste
• Chaat masala – ½ tsp
• Oil – 1 tsp

Stuffing
• Chana dal – ½ cup
• Ghee – 2 tbs
• Jeera – 1 tsp
• Chopped ginger – 1 tsp
• Salt
• Kashmiri red chilli – ½ tsp
• Coriander powder – 1 tsp
• Amchor powder – ½ tsp
• Garam masala – ½ tsp
• Chaat masala – ½ tsp
• Chopped cashew nuts – 1 ½ tsp
• Raisins – 1 ½ tsp
• Green chilli – ½ tsp
• Chopped coriander – 2 tbs

Masala
• Kala namak – ½ tsp
• Kashmiri red chilli – 1/3 tsp
• Chaat masala – ½ tsp
• Coriander powder – ½ tsp
• Jeera powder – ½ tsp

Tikki Chaat
• Yougurt – 1 cup
• Imli chatni
• Coriander mint chutney

Method:
1. Boil and peel the potatoes
2. Wash and cook the chana dal – 3 whistles in pressure cooker
3. Mash the potatoes
4. Drain water completely from the cooked chana dal
5. For stuffing – hear a pan and 2 tbs ghee
6. Add jeera and let it crackle
7. Add chopped jeera
8. Cook for a minute
9. Add salt, Kashmiri red chilli, coriander powder, Amchor, garam masala, chaat masala, chopped cashew nuts and raisins, green chilli
10. Cook for a minute until spices are cooked
11. Add the cooked dal and cook until well combined
12. Add chopped coriander
13. Set aside to cool down
14. Add corn flour in mashed potatoes with salt, chaat masala and oil and combine well
15. Rest the dough for 10 mins before making tikki
16. Take small dough and make a well, fill with the dal stuffing and close to make a ball
17. Flatten it and shape it into a tikki
18. Heat a pan with enough oil to partially dip the tikki
19. Add tikki and cook well from 1 side and flip over to cook from both sides
20. Cook until both sides and crisp and golden brown
21. Make the masala by mixing together kala namak, red chilli, chaat masala, coriander powder, jeera powder

Tikki chaat
• Whisk some yogurt and add 1 ½ tsp sugar and combine well
• Take a tikki and spread masala on top
• Spread some Imli chutney on top
• Spread some coriander and mint chutney on top
• Add the yogurt on top
• Add some chutneys again over the yogurt
• Tikki chaat is ready to eat and enjoy!
