Crispy Chicken Biryani:
Ingredients:
Chicken legs 4
Tomato puree 1 ½ cup
Onion (chopped) 1 cup
Ginger garlic paste 1 tbsp
Cinnamon stick 1/2 piece
Bay leaf 1
Star anise 1
Yogurt 1 cup
Garam masala 1/4 tsp
Black cardamoms whole 2
Black pepper corn 6-7
Cloves 6-7
Cinnamon sticks 2 pieces
Turmeric 1 tsp
Red chili flakes 1 tsp
Red chili powder 1 tbsp
Coriander powder 1 tsp
Cumin powder 1 tsp
Rice soaked 1 cup
Salt to taste
Ingredients for butter milk preparation:
Milk 1 cup
Vinegar 2 tbsp
Ingredients for Marination:
Lemon juice 2 tbsp
Black pepper powder 1/2 tsp
Red chili powder 1 tsp
Butter milk 2 tbsp
Salt to taste
Ingredients for Flour Mixture:
All-purpose flour as required
Ginger powder 1 tbsp
Garlic powder 1 tbsp
Ingredients for layering:
Fried onion (as required)
Round green chilies (as required)
Mint leaves (as required)
Yellow color 1 tsp
Directions for chicken marination:
In a glass add milk, vinegar and give it a good stir.
Let it sit for 15 to 20 minutes. Your buttermilk is ready.
In a bowl add salt, lemon juice, black pepper powder, red chili powder, butter milk and mix them well.
Now take chicken leg piece and prick them with help of a fork.
Mix them properly in the buttermilk mixture and marinate for 15 to 20 minutes at least.
In another bowl add flour, ginger powder, garlic powder and mix them well.
Your flour mixture is ready. Now take one leg piece coat flour on them with soft hands.
Now dip in chilled water and again coat them in flour mixture.
Deep fry the leg piece on low medium frame flame until light golden brown.
Tip: When coating is done fry right away for best results. Set aside.
Directions for Rice:
Boil the water in a pot then add salt, bay leaf, cinnamon stick and stir.
Add the soaked rice and cook until 80% done and stain. Set aside
In pan heat oil, add onions and cook until translucent. Add ginger garlic paste and sauté for a minute.
Now add tomatoes puree, black cardamom whole, black pepper corn, cinnamon stick, cloves, turmeric, red chili powder and star anise. Cook for 5 to 6 minutes.
Then add red chili flakes, coriander powder, cumin powder and garam masala.
Cook for 6 to 8 minutes or oil separates. Your gravy is ready.
Directions for layering:
Take a pan add masala on bottom then cover it with rice and repeat this layering process 2 to 3 time.
Now sprinkle fried onion, green chilies, mint leaves, yellow food color and water on top.
Cover with the lid and let it simmer on medium low flame for about 10 minutes.
Your biryani is ready, top it with crispy fried chicken and serve.
Preparation time: 20-25 minutes
Cooking time: 35-40 minutes
Serving: 3-4
