CRISPY MIRCHI PARANTHA

Ingredients

6 tsps chopped green chillies
4 tsps chopped fresh red chillies
2 cups whole wheat flour + for dusting
2 cups refined flour
Salt to taste
2 tsps Tata Sampann Chilli Powder
2 tsps ghee + for applying
4 tsps oil
3 tsps crushed black peppercorns
4 tbsps chopped fresh coriander

Method

1. Take whole wheat flour in a large bowl, add refined flour, salt, Tata Sampan Chilli Powder, 2 tsps ghee and 2 cups water, mix well and knead to a semi soft dough. Add oil and knead again. Cover and set aside for 10-15 minutes.
2. Mix green chillies, red chillies, crushed black peppercorns and coriander in a bowl.
3. Divide the dough into 4 equal portions and roll each portion into a ball.
4. Flatten each ball and roll out into thin disc. Apply some ghee on top and dust some flour.
5. Pleat the roti to make a number of folds and roll up into a spiral. Press between your palms, dust some flour on the surface and roll out lightly into a parantha.
6. Apply some more ghee on top of the rolled parantha and sprinkle a generous amount of chilli mixture on top.
7. Heat a non-stick tawa, place the prepared parantha and cook on medium heat till underside is done. Flip and cook till the other side is done as well.
8. Drizzle some ghee and cook on both the sides till golden brown. Crush the parantha to separate the layers and drizzle some ghee on top.
9. Serve hot with yogurt.
