Crispy Parmesan Potato Wedges another super easy and super delicious dish for you today!CRISPY PARMESAN POTATO WEDGESIngredients¼ cup parmesan cheese powder2 large potatoes¼ cup refined flourCrushed black peppercorns to tasteSalt to taste1½ teaspoons red chilli flakesOil for deep-frying1 teaspoon chopped fresh parsleyMethod1. Halve the potatoes and cut into wedges.2. Heat some water in a small deep non-stick pan and bring to a boil. Add potato wedges, cover and par boil. Strain in a bowl.3. Combine flour, crushed peppercorns, salt and 1 teaspoon chilli flakes in another bowl and mix well. Add it to par boiled potatoes and toss to mix. Transfer potato wedges in a zip lock bag, seal and freeze for 4-6 hours. Remove from freezer and separate the wedges.4. Heat sufficient oil in a pan. 5. Combine parmesan cheese, remaining chilli flakes and chopped parsley in another bowl and mix well.6. Deep-fry potato wedges in hot oil till golden and crisp. Drain on absorbent paper and sprinkle some cheese mixture on top.7.
