Crispy Pork Belly 脆皮烧肉 | Emilee's Kitchen 愛米丽厨房

Crispy Pork Belly is not hard to make. The only cons is it takes time, waiting time. But, all the good food need patience.

Things to bear in mind in making this crispy pork belly:
1. Try to get a piece of pork belly that is level. Otherwise it can't be cooked evenly (the one I used in the video is a great example).
2. If you cannot get a level pork belly, you may need to stand beside oven to keep an eye and monitor your pork. (that is what I did).
3. When one side (the higher side) is ready, you need to use an aluminium foil to cover it before the other side (the low side) get crispy. Otherwise when the low side is crackled, the high side is burnt.
4. The get the best result, need to ensure the skin is totally dry.
5. The get the crackling evenly, you need to ensure you poke the holes evenly. I didn't , so you can see the crackling is not even (not all the area are popped).
6. Many people cover the skin with salt when it is being roasted in the oven, however, it is not needed if you skin is really dry. You should cover the skin with salt if the skin is not 100% dry because salt will draw the moisture out of the skin.

Although the looks is not perfect, but it tastes awesome, sensational.

脆皮烧肉不难做。但是你需要耐心, 去等待。等待是难熬的,但是美食不就是就要时间吗。

制作脆皮烧肉需要注意几点
1. 找一个平整的五花肉是很重要的。如果一边高,一边低,那你就不能烤均匀(像我视频里的那一块就是一个很好的例子)
2. 如果真找不到平整的肉,那你就需要像我一样,站在烤箱旁,不停的观察
3. 如果比较高的一面,皮已经烤的非常好了,你一定要及时用锡箔纸把那一面给盖住,让比较低的那一面继续烤,否则当低的那一面烤好了,高的一面也焦了。
4. 一定确保皮完完全全的干了
5. 如果想要你的五花肉皮完美的,均匀的爆开,确保在插洞的时候,也要均匀。视频里就是没插那么均匀,所以可以看到有些地方爆的很美,有些地方则没爆开来。
6. 很多人在放入烤箱的时候,会撒一层盐,盖住皮。但是如果你的皮是非常干的话,这个步骤是可以省略的。除非你的皮不够干,那你就需要盐了。因为盐的确可以把水分给逼出来。

最后, 最后,虽然视频的五花肉,目测,并不是很完美,但是吃起来, 绝对没有骗你的好吃。
