Deep fried water chestnuts tossed in sweet and spicy sauce.CRISPY WATER CHESTNUTSIngredients 1 cup canned water chestnuts1 tablespoon oil + for deep-fryingSalt to taste1 tablespoon refined flour1 tablespoon cornstarch1 tablespoon chopped garlic½ tablespoon chopped ginger2 tablespoons sweet chilli sauce1 teaspoon red chilli powder1 tablespoon soy sauce2 stalks spring onion greens1 tablespoon tomato ketchupMethod1. Heat sufficient oil in a kadai. 2. Take water chestnuts in a bowl. Add salt, refined flour and cornstarch and mix well.3. Deep-fry the water chestnuts in the hot oil till golden and crisp. Drain on absorbent paper. 4. Heat 1 tablespoon oil in a non-stick pan. Add garlic and ginger, mix and sauté for 30 seconds. Add sweet chilli sauce and mix well. Add some water, mix and cook for 30 seconds. 5. Add chilli powder and soy sauce, mix and cook for a minute.6. Cut the spring onions greens.7. Add the fried water chestnuts into the pan and mix well.Add tomato ketchup and mix well. Add chopped spring onion greens and toss to mix.8.
