Cucumber Cake By Roopa Nabar || Costal Kitchen | India Food Network

Here is a different take on cakes, Roopa Nabar shows you a cucumber cake which is very common in konkani household during festivals! Try it and leave your comments :)

ingredients: 2 cups grated big cuccumber
1 cup grated jaggery
3/4 cup rice rava
1tsdp ghee
cardamon powder, peanuts, cashew, coconut small pieces, 2 turmeric leaves and salt (optional),
pinch of baking powder

Method : roast rava in ghee
mix the cucmumber and jaggery
nuts and cardamon poedrer
let it rest for 45 mins
preheat oven at 200 and add baking powder to the mixture
grease the baking dish arrange the tumeric leaves and pour the mixture into the pan and cover with tumeric leaves
bake for 45mins
cut into piecies when cool
