This Independence Day is all about freeing yourself from the 'not so healthy' food. But, that doesn't mean you've to miss out on the good things in life. Bake this unique nutritious cake with cucumbers & celebrate azaadi in a wholesome way.

CUCUMBER RAVA CAKE

Ingredients

2 large cucumbers
1 cup semolina (rava)
Sea salt as required
1 cup yogurt
1 cup sugar
1 cup ghee + for greasing
½ tsp vanilla essence
1 cup milk
½ tsp baking soda + to sprinkle
6-8 cashewnuts, halved


Method


1. Spread sea salt at the base of a pressure cooker. Place a ring upside down, remove the gasket and the whistle from the lid and close it.
2. Preheat for 10 minutes.
3. Peel the cucumbers, cut them into 3 pieces and remove the seeds. Grate the cucumbers.
4. Add semolina, yogurt, sugar, ghee, vanilla essence, milk and mix well.
5. Add baking soda and mix well.
6. Grease a baking tin with ghee and sprinkle baking soda.
7. Pour the prepare batter and arrange cashewnuts on top. Place the tin in preheated pressure cooker and cook for 45 minutes on medium heat.
8. Allow to cool completely and demould. Cut into wedges and serve.
