CUCUMBER RAVA CAKEIngredients2 large cucumbers1 cup semolina (rava)Sea salt as required1 cup yogurt1 cup sugar1 cup ghee + for greasing½ tsp vanilla essence1 cup milk½ tsp baking soda + to sprinkle6-8 cashewnuts, halvedMethod1. Spread sea salt at the base of a pressure cooker. Place a ring upside down, remove the gasket and the whistle from the lid and close it.2. Preheat for 10 minutes.3. Peel the cucumbers, cut them into 3 pieces and remove the seeds. Grate the cucumbers.4. Add semolina, yogurt, sugar, ghee, vanilla essence, milk and mix well.5. Add baking soda and mix well.6. Grease a baking tin with ghee and sprinkle baking soda.7. Pour the prepare batter and arrange cashewnuts on top. Place the tin in preheated pressure cooker and cook for 45 minutes on medium heat.8. Allow to cool completely and demould.
