Cucumber Sandwich with an interesting touch of Tahini, made from ground roasted sesame seeds, is a refreshing way to satiate your hunger pangs.CUCUMBER TAHINI SANDWICHIngredients2 medium English cucumber cup tahini 8 brown bread slices1 cups hung yogurtCrushed black peppercorns to taste1 tsp garlic pasteSalt to taste4-5 sprigs of fresh dill 1 tsp olive oil lemonPickled onion slices as requiredHummus to serveCrudites to serveMethod1. Take hung yogurt in a bowl. Add crushed black peppercorns, garlic paste, salt, tear the leaves of dill sprigs and add into the bowl. Whisk till well combined.2. Thinly slice the cucumbers into roundels. Transfer into another bowl. Add salt, crushed black peppercorns, olive oil and squeeze the juice of lemon and mix well.3. To make one sandwich, apply tahini one on side of two bread slices. Add a portion of the yogurt mixture on each slice and spread it evenly. Arrange generous slices of the cucumber over one slice of bread, top it up with some pickled onion slices, place the other bread slice over this with the yogurt side facing down. Wrap the sandwich with a parchment paper and refrigerate for 1-2 hours.4. Cut the sandwich in half. Arrange on a serving plate. Serve with hummus and crudites.
