Curried Chicken Satay | Sanjeev Kapoor | Sanjeev Kapoor Khazana

CURRIED CHICKEN SATAY

Ingredients

1 tablespoon curry powder
250 grams boneless chicken, cut into strips
2 tablespoons peanut butter
2 tablespoons coconut cream
1-2 green chillies, finely chopped
1 teaspoon dark soy sauce
1 tablespoon lemon juice
Crushed black peppercorns to taste
Salt to taste
1 tablespoon chopped fresh coriander leaves
Butter for greasing
3-4 iceberg lettuce leaves

Method

1. Take chicken strips in a bowl. Add peanut butter, coconut cream, green chillies, curry powder, soy sauce, lemon juice, crushed peppercorns, salt and coriander leaves and mix well. Set aside to marinate for 10-15 minutes.
2. Preheat an electric grill toaster.
3. Skewer each marinated chicken strip on a satay sticks.
4. Grease the preheated toaster with some butter, place the prepared satay sticks onto the preheated toaster and grill from both sides till golden and chicken is cooked.
5. Place few iceberg lettuce leaves on one side of the platter, place satay sticks on other side and serve hot.
