CURRIED CHICKEN SATAYIngredients1 tablespoon curry powder250 grams boneless chicken, cut into strips2 tablespoons peanut butter2 tablespoons coconut cream1-2 green chillies, finely chopped1 teaspoon dark soy sauce1 tablespoon lemon juiceCrushed black peppercorns to tasteSalt to taste1 tablespoon chopped fresh coriander leavesButter for greasing3-4 iceberg lettuce leavesMethod1. Take chicken strips in a bowl. Add peanut butter, coconut cream, green chillies, curry powder, soy sauce, lemon juice, crushed peppercorns, salt and coriander leaves and mix well. Set aside to marinate for 10-15 minutes.2. Preheat an electric grill toaster. 3. Skewer each marinated chicken strip on a satay sticks.4. Grease the preheated toaster with some butter, place the prepared satay sticks onto the preheated toaster and grill from both sides till golden and chicken is cooked. 5. Place few iceberg lettuce leaves on one side of the platter, place satay sticks on other side and serve hot.
