Curried Egg Sandwich | Sanjeev Kapoor Khazana

A mayonnaise flavoured egg mixture stuffed between the breads and served chilled.

CURRIED EGG SANDWICH - (Serves - 4)

Ingredients

2 teaspoons curry powder
4 eggs, boiled and peeled
8 brown bread slices
½ teaspoon red chilli flakes
Salt to taste
1 spring onion with greens, finely chopped
2 tablespoons mayonnaise + as required

Method

1. Take eggs in a bowl and mash using a fork. Add chilli flakes, curry powder, salt and spring onion with greens and mix. Add mayonnaise and mix well.
2. Spread some mayonnaise onto the bread slices. Top 4 slices with a portion of the egg mixture and spread evenly. Cover with the remaining slices, mayonnaise side down.
3. Cut into triangles and serve immediately with banana wafers and tomato ketchup.
