Subscribe to Jen's channel: http://taste.md/1T2BCK8INGREDIENTSFor the oatmeal:1 cup quick cooking steel cut oats1 ½ cups coconut milk½ cup water 1 tbsp butter1 medium zucchini, medium diced½ tsp ginger, peeled and grated1 garlic clove, grated½ tsp turmeric powder¼ tsp ground cumin¼ tsp ground coriander¼ tsp ground cardamon¼ tsp cayenne pepperSalt & pepper to tasteFor the toppings:1 tbsp green onions, thinly sliced1 tbsp pine nuts, toasted1 tbsp golden raisinsRECIPE In a medium pot on medium-high heat, melt butter and sauté ginger, garlic, and spices, until it smells slightly nutty and fragrant. Add zucchini and stir occasionally. Cook for about 2-3 minutes, or until tender. Remove half and set aside for the topping.Add coconut milk and water to the pot and bring to a boil. Stir in the oats and cook on medium-low for about 6-8 minutes, or until softened to your liking.
