Curry Leaf Prawns | Sanjeev Kapoor Khazana

Marinated jumbo prawns coated with curry leaf breadcrumb mixture and deep fried.

CURRY LEAF PRAWNS

Ingredients

1 cup curry leaves
6-8 jumbo prawns, shelled and deveined with tail intact
1 tablespoon ginger-garlic paste
1 tablespoon lemon juice
Salt to taste
1 teaspoon crushed black peppercorns
1 cup fresh breadcrumbs
1 teaspoon red chilli flakes
Oil for deep-frying

Method

1. Dry roast curry leaves in a non-stick pan.
2. Put prawns in a bowl, add ginger-garlic paste, lemon juice, salt and pepper powder and mix well.
3. Transfer the curry leaves in a mixer jar and grind coarsely.
4. Mix curry leaves, breadcrumbs, chilli flakes, pepper powder, salt and mix well.
5. Coat each prawn in the prepared mixture.
6. Heat sufficient oil in a kadai.
7. Deep-fry the prawns in hot oil till crisp and brown on both the sides.
8. Transfer on a serving plate and serve hot.
