Custard Falooda Recipe
Ingredients for soaking chia seeds:
Chia seeds 1 tsp
Water 1 cup
Ingredients for Vermicelli:
Water 1 ½ cup
Corn flour 1/2 cup
Icing Sugar 1 tbsp
Chilled water as required
Ingredients for Custard:
Milk 1 L
Vanilla Custard Powder + Milk 4 tbsp 1 cup
Icing Sugar 1/2 cup
Green Cardamom powder 1/4 tsp
Ingredients for Strawberry Jelly:
Water 2 cups
Strawberry Jelly Powder 1/4 cup
Ingredients for Banana Jelly:
Water 2 cups
Banana Jelly Powder 1/4 cup
Assembling:
Chilled Custard
Chilled Vermicelli
Chilled Jellies
Chia Seeds (soaked)
Chopped Almonds & Pistachios
Directions for soaking chia seeds:
1. Soak chia seeds in water and let rest for 20 minutes.
Directions for Vermicelli Preparation:
2. Now, in a pan add water, corn flour and sugar and mix. Turn on the flame and keep stirring until the mixture starts to thicken. Cook on medium low flame until the mixture becomes translucent.
3. Transfer this mixture into the seviyan maker and make the seviyan into the chilled water. Let it rest for 20-30 minutes.
Directions for Custard Preparation:
4. In a pot heat milk and icing sugar and bring it to boil. Add custard slurry and let cook on medium flame until it starts to thicken while stirring continuously. Add cardamom powder and cook until it has thickened. Cool it down on room temperature.
Directions for Strawberry Jelly Preparation:
5. Now, bring 2 cups of water to boil in a pan and stir in strawberry jelly powder and cook until dissolved. Pour into mold and let cool.
Directions for Banana Jelly Preparation:
6. In another pan bring 2 cups of water to boil in a pan and stir in banana jelly powder and cook until dissolved. Pour into mold and let cool.
7. Cut both jellies into small cubes and set aside.
Directions for Assembling:
8. Now, fill in the glasses with jellies, chia seeds, custard, falooda seviyan, and chopped nuts. Serve chilled.
Preparation Time: 30 minutes
Cooking Time: 40 minutes
