For the tomato sauce2 cups roughly chopped tomatoes½ tbsp sugar3 tbsp tomato ketchup½ tsp chilli powderSalt to tasteFor the cutlets1½ cups boiled, peeled and mashed potatoes2 tsp finely chopped green chillies1 tbsp cornflour2 tsp lemon juiceSalt to tasteOil for greasing and cookingFor the topping½ cup cooked spaghettiFor the tomato sauce1. Combine the tomatoes with ¼ cup of water in a deep non-stick pan, mix well and cook on a medium flame for 4 to 5 minutes or till the tomatoes are soft.2. Allow them to cool and blend in a mixer to a smooth mixture.3. Strain the mixture with help of a strainer and transfer into a broad non-stick pan.4. Add the sugar, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep asideFor the cutlets1. Combine all the ingredients in a deep bowl and mix well.2. Divide the mixture into 8 equal portions and roll each portion into a 50 mm. (2”) flat round cutlet.3. Heat a non-stick tava (griddle) and grease it with little oil and cook the cutlets, using oil till they are golden brown in colour from both the sides.
