Cutlets in Tomato Sauce with Spaghetti

Is this a snack or a meal? Actually, you can consider it a meal in a bowl, because the combination of cutlets and spaghetti makes it quite sumptuous while the tomato sauce provides all the flavours you need to by-pass a separate accompaniment. Overall, the cutlets in tomato sauce with spaghetti is a winner when it comes to preparing a tasty yet different kind of meal for a break from routine.

Preparation Time: 20 minutes.
Cooking Time: 12 minutes.
Serves 4.

For the tomato sauce
2 cups roughly chopped tomatoes
½ tbsp sugar
3 tbsp tomato ketchup
½ tsp chilli powder
Salt to taste

For the cutlets
1½ cups boiled, peeled and mashed potatoes
2 tsp finely chopped green chillies
1 tbsp cornflour
2 tsp lemon juice
Salt to taste
Oil for greasing and cooking

For the topping
½ cup cooked spaghetti

For the tomato sauce
1. Combine the tomatoes with ¼ cup of water in a deep non-stick pan, mix well and cook on a medium flame for 4 to 5 minutes or till the tomatoes are soft.
2. Allow them to cool and blend in a mixer to a smooth mixture.
3. Strain the mixture with help of a strainer and transfer into a broad non-stick pan.
4. Add the sugar, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside

For the cutlets
1. Combine all the ingredients in a deep bowl and mix well.
2. Divide the mixture into 8 equal portions and roll each portion into a 50 mm. (2”) flat round cutlet.
3. Heat a non-stick tava (griddle) and grease it with little oil and cook the cutlets, using oil till they are golden brown in colour from both the sides. Keep aside.

How to proceed
Place the cutlets in a serving plate, pour a little sauce over each cutlet and put the spaghetti evenly over it.
Serve immediately.
