DAHI KI KADHI

Ingredients

1 cup yogurt
2 tablespoons gram flour (besan)
2 teaspoons oil
1 teaspoon cumin seeds
4-5 curry leaves
1 green chilli, chopped
A pinch of asafoetida
1 inch ginger, grated
½ teaspoon mustard seeds
¼ teaspoon turmeric powder
¼ teaspoon sugar
Salt to taste
Chopped fresh coriander leaves, for garnish

Method

1. Put yogurt and gram flour in a bowl and mix well till no lumps
remain.
2. Heat oil in a non-stick pan, add cumin seeds, curry leaves,
green chilli, asafoetida, ginger and mustard seeds and sauté
till the seeds splutter.
3. Add yogurt mixture and one cup water and mix well. Cook for
four to five minutes on low heat.
4. Add turmeric powder, sugar and salt and mix well. Let the
mixture come to a boil.
5. Transfer into a serving bowl, garnish with coriander leaves and
serve hot with steamed rice.
