A mouth-melting pakodi chaat that is full of different flavours and textures that work really well with each other!

DAHI PAKODI CHAAT

Ingredients

1 cup Tata Sampann Moong Dal
Oil for deep frying
½ tsp roasted cumin powder
Salt to taste
1-2 green chillies, chopped
1 inch ginger, finely chopped
¼ cup fresh fenugreek leaves (methi), finely chopped
1 medium onion, finely chopped
¼ tsp turmeric powder
A pinch of baking soda
Yogurt mix
1½ cups yogurt
2 tbsps sugar
¾ tsp roasted cumin powder
¼ tsp chaat masala
Salt to taste
Black salt to taste
A pinch of red chilli powder
¼ tsp yellow chilli powder
Chaat
Green chutney for drizzling
Date and tamarind chutney for drizzling
Yellow chilli powder to sprinkle
Chaat masala for sprinkling
Roasted cumin powder for sprinkling
Red chilli powder for sprinkling
Nylon sev for garnish
Fresh pomegranate pearls for garnish
Chopped fresh coriander leaves for garnish

Method

1. Take 1 cup Tata Sampan Moong Dal in a bowl, add water, wash and drain. Soak with sufficient water for 8-10 hours.
2. Add Tata Sampan Moong Dal in a blender jar and grind into coarse paste and transfer the mixture in a bowl and set aside.
3. Heat sufficient oil in a kadai.
4. Add roasted cumin powder, salt, green chilli, ginger, methi, onion and mix well. Add turmeric powder, pinch of baking soda and mix well.
5. Put the small portion of batter in oil with the help of spoon and deep-fry till golden brown and crisp. Drain on an absorbent paper.
6. Take yogurt in bowl, add sugar, roasted cumin powder, chaat masala, salt, black salt, red chilli powder, yellow chilli powder and whisk well till creamy and thick consistency.
7. Pour yogurt mix in a serving bowl, add pakodas, green chutney, date and tamarind chutney and yellow chilli powder chaat masala, roasted cumin powder, red chilli powder, nylon sev, pomegranate, chopped coriander.
8. Serve immediately.
