Learn how to make basic Varan / Dal and also other types of dal from our chef Archana on Ruchkar Mejwani Basic Cooking.Ingredients:For Basic Dal / Varan250 gms Tur DalWater1/2 tsp Hing1/2 tsp Turmeric PowderSugarSalt to tasteFor Ambat Varan2-3 tsp Oil1 tsp Cumin Seeds1 tsp Mustard Seeds10-12 Curry Leaves2-3 Green Chillies1 Tomato choppedCoriander leavesTur Dal, cooked3-4 Kokam1/2 tsp SugarSalt to tasteWaterFor Spicy Varan2 tbsp Oil1 tsp Cumin Seeds1 tsp Mustard Seeds1 tbsp Ginger Garlic Crush10-12 Curry Leaves1 Onion, chopped1 tbsp JaggeryCoriander Leaves1 tbsp Grated Coconut1 tbsp Mix MasalaSalt to tasteWaterTur Dal, cookedMethod:To make basic varan:- In a pressure cooker add tur dal & water.- Then add hing & turmeric powder. Let the dal cook on 3-4 whistles.- Once the dal is cooked add little water and churn well.- Add sugar and again mix well.- Let the dal boil in slow flame.- Basic varan is ready. Serve it with a dollop of ghee.To make ambat varan:- Pressure cook the tur dal and keep it aside.- In a pan heat some oil.- Add cumin seeds, mustard seeds, curry leaves, green chillies, coriander leaves & chopped tomato. Saute everything well.- Add pressure cooked tur dal, kokam, sugar & salt. Mix well.- Add water and let the dal boil for some time.- Garnish with coriander leaves and serve.To make spicy varan:- Pressure cook the tur dal and keep it aside.- In a pan heat some oil.- Add mustard seeds, cumin seeds, ginger garlic crush, curry leaves, chopped onion, mix masala, jaggery, coriander leaves, grated coconut & salt.
