Degi Steam Roast Biryani

Preparation for Chicken Steam Roast:
Chicken 8-10 pieces
Oil (for frying)

Yogurt ½ cup
Ginger Garlic Paste 1 tbsp
Salt 1 tsp or to taste
Red chili powder 1 tsp
Paprika powder ½ tsp
Turmeric powder ½ tsp
Chaat masala 1½ tsp
Cumin powder 1 tsp
Coriander powder 1½ tsp
Food color ¼ tsp
Lemon juice 1 tbsp
Soy Sauce ½ tbsp
Vinegar 1 tbsp

Preparation for Degi Rice:
Rice 3 cups
Water

Oil ¾ cup
Cumin seeds 1 tsp
Whole Garam Masala
(black peppercorn, cloves, cinnamon, black cardamom, green cardamom)
Ginger garlic paste 1 tbsp
Green chili paste 1½ tbsp
Water 4 cups
Salt 1 tbsp
Rice (soaked)
Food color as req
Garnish (green chilies, tomato, lemon juice, coriander, mint) as req
Steam Roast Chicken

Directions:
1. Place deep cuts in the chicken. And deep fry in oil until it changes color.
2. In a bowl, add all the ingredients for marinade and coat the fried chicken with the marinade. Let it marinate for 2-4 hrs.
3. Add water in a steamer, bring it to a boil and place the marinated chicken pieces on the plate and cover with the lid. Steam for 25-30 minutes over medium low flame.
4. Take the steam roast chicken out of the steamer and keep aside.
5. Now, soak rice in water for 25 mins.
6. Meanwhile, heat oil in a pot. Add cumin and whole garam masala and cook for a minute.
7. Add ginger garlic paste and chili paste and cook for another minute. Add coriander, saute for a moment and then add water. Add salt, mix and let it boil.
8. Once the water starts boiling add rice. When rice puffs up. Add food color, garnish, and chicken. Cover with lid and steam for 12-15 minutes.
9. Serve hot and enjoy.
