DEHATI MUTTON

Ingredients

750 grams mutton on bone, cut into 1 inch pieces
1½ tbsps ginger-garlic paste
¼ tsp turmeric powder
Salt to taste
¼ cup mustard oil
3 medium onion, sliced
4-5 green cardamoms
2 black cardamoms
1 inch cinnamon stick
2 bay leaves
2-3 dried red chillies
1 tsp green chilli paste
3 tsps coriander powder
Crushed black peppercorns to taste
1½ tsps cumin powder
2 tsps garam masala
1 cup yogurt
Coriander sprig for garnish
Steamed rice to serve

Method

1. In a bowl, add mutton pieces, ginger-garlic paste, turmeric powder, mix well. Add salt and mix well. Set aside.
2. Heat mustard oil in a non-stick pressure cooker, let it smoke. Switch the flame off and let the oil cool slightly.
3. Switch the flame on and add onion, sauté for 2-3 minutes. Make a well in the centre and add green cardamoms, black cardamom, cinnamon stick, bay leaves, break dried red chillies and add to the pan. Sauté for 1-2 minutes.
4. Add green chilli paste, mix well. Add the mutton pieces and mix well. Sauté for 2-3 minutes on high heat.
5. Add coriander powder, crushed black peppercorns, cumin powder, garam masala powder, salt and mix well.
6. Add yogurt, and mix well. Sauté for 1-2 minutes. Add sufficient water, mix well and pressure cook for 6-8 whistles.
7. Open the lid once the pressure has settled completely. Stir and cook for 5-10 minutes.
8. Garnish with coriander sprig and serve hot along with steamed rice.
