A broth infused with a variety of spices, flavors and mutton served with rice that truly helps reflect India’s diversity.DEHATI MUTTONIngredients750 grams mutton on bone, cut into 1 inch pieces1½ tbsps ginger-garlic paste¼ tsp turmeric powderSalt to taste¼ cup mustard oil3 medium onion, sliced4-5 green cardamoms2 black cardamoms1 inch cinnamon stick2 bay leaves2-3 dried red chillies1 tsp green chilli paste3 tsps coriander powderCrushed black peppercorns to taste1½ tsps cumin powder2 tsps garam masala1 cup yogurtCoriander sprig for garnishSteamed rice to serveMethod1. In a bowl, add mutton pieces, ginger-garlic paste, turmeric powder, mix well. Add salt and mix well. Set aside.2. Heat mustard oil in a non-stick pressure cooker, let it smoke. Switch the flame off and let the oil cool slightly.3. Switch the flame on and add onion, sauté for 2-3 minutes. Make a well in the centre and add green cardamoms, black cardamom, cinnamon stick, bay leaves, break dried red chillies and add to the pan. Sauté for 1-2 minutes.4. Add green chilli paste, mix well. Add the mutton pieces and mix well. Sauté for 2-3 minutes on high heat.5. Add coriander powder, crushed black peppercorns, cumin powder, garam masala powder, salt and mix well.6. Add yogurt, and mix well. Sauté for 1-2 minutes. Add sufficient water, mix well and pressure cook for 6-8 whistles.7. Open the lid once the pressure has settled completely. Stir and cook for 5-10 minutes.8.
