Delicious Nigerian Mackerel Fish Sauce

Ingredients:
2 Grilled Mackerel fish
1 onion, sliced
1 onion
4 Tomato
2 Bell Peppers
2 habanero
1/4 cup oil
Curry powder
Thyme
2 inch ginger
4 cloves garlic
Chicken stock optional
Green and red bell peppers
Parsely

Directions:
Shred the grilled mackerel fish and set aside.
Use the food processor to coarsely blend the bell peppers, Tomatoes, ginger, garlic, and Onions in a food processor.
Heat the oil in a large pan, add the sliced onions and leave to caramelize for 5 to 6 minutes
Add the blended peppers and cook for about 20 minutes or till the sauce is reduced.
Season with salt, seasoning powder, curry, thyme, salt, and seasoning powder.
Add the shredded fish and add the chicken stock if needed
Add the bell peppers
Garnish with parsley (optional)
serve with boiled yam, rice, couscous, pasta, or bread
