Desi Pasta
(Makhni Pasta, Tadka Pasta, Masala Mac n Cheese)
Ingredients
For Makhani Sauce
Tomatoes (टमाटर), Diced – 5 cups
Cashew (काजू) – 12 nos
Ginger (अदरक) – 1 small piece
Onion (प्याज़), Diced – ½ cup
Green chillies (हरी मिर्च) – 3 nos
Green Cardamom (हरी इलाइची) – 3 nos
Garlic (लहसून) – 8 cloves
Kashmiri Mirch Powder (कश्मीरी लाल मिर्च) – 1 tbsp
Butter (मक्खन) – 2 tbsp
Salt (नमक) – to taste
Water (पानी) – 1 cup

For Finishing
Butter (मक्खन) – 2tbsp
Green chillies (हरी मिर्च) – 1 no
Ginger (अदरक), Chopped – 1 tsp
Fenugreek leaves powder (कसूरी मेथी पाउडर) – 1 big pinch
Sugar/Honey (चीनी या शहद) – ½ tsp
Coriander (धनिया), Chopped – 1 tbsp
Cream (मलाई) – 3-4tbsp
Mozzarella, cubes (मोजारेला चीज) – ½ cup

For Boiling Pasta
Penne (पेने पास्ता) – 2 cups
Salt (नमक) – 1 tbsp
Water (पानी) – 1lt

Tadka Pasta
Macaroni (मैकरोनी पास्ता) – 2 cups
Salt (नमक) – 1 tbsp
Water (पानी) – 1lt
Oil (तेल) – 3 tbsp
Peanuts (मुंगफली) – handful
Asafoetida (हींग) – 1 pinch
Dry red chilli (सूखी लाल मिर्च) – 2 nos
Mustard Seeds (राई) – 2 tsp
Cumin seeds (जीरा) – 1 tsp
Green chillies (हरी मिर्च), Chopped – 1 no
Curry Leaves (करी पत्ता) – 8-10
Onion (प्याज़), Chopped – ½ cup
Turmeric (हल्दी) – ½ tsp
Salt (नमक) – to taste
Coriander (धनिया), Chopped – 2 tbsp
Lemon Juice (नींबू) – 1½ tsp
Sugar (चीनी), optional – 1 tsp

Masala Mac n Cheese
Oil (तेल) – 1½ tbsp
Butter (मक्खन) – 1½ tbsp
Garlic (लहसून), Chopped – 1½ tsp
Ginger (अदरक), Chopped – 1½ tsp
Green chillies (हरी मिर्च), Chopped – ½ tsp
Onion (प्याज़), Chopped – ½ cup
Turmeric (हल्दी) – ½ tsp
Chilli powder (लाल मिर्च) – 1 tsp
Coriander powder (धनिया पाउडर) – 2tsp
All Purpose Flour (मैदा/आटा) – 1 tbsp
Tomato (टमाटर), Chopped – ½ cup
Corn niblets (मकई के दाने) – ¼ cup
Salt (नमक) – to taste
Milk (दूध) – ½ cup
Macaroni (मैक्रोनी) – 2 cups
Water (पानी) – 2cups
Green peppers (शिमला मिर्च), Chopped – 2 tbsp
Fenugreek leaves (कसूरी मेथी) – a pinch
Chopped Coriander (धनिया) – a handful
Water (पानी) – a dash
Cheese grated (चीज) – ½ cup
