Dimer Kosha- Durga Puja Special | Chef Ananya Banerjee

Dimer Kosha or Bengali Styled Egg Curry, I am sure, has several memories for most of all Bengalis. The main ingredient in this dish is egg and cooking this is quite easy as well.

Ingredients:
• 2-3 Eggs, boil
• 1 cup of ground paste made with Tomato, ginger, garlic, onion, green chillies
• ½ tsp Turmeric power
• 1/2 Cumin power
• 1/4 Garam masala power
• 1tbsp Bristab (fried onion sliver)
• 3 tbsp Mustard oil
• 1tsp ghee
• Sugar and salt to taste
• Red chilli powder

Method:
1. Apply Turmeric and salt on the boil eggs.

2. Heat 1tbsp oil. Fry the eggs till they turn orange in colour. Keep aside.

3. Heat the remaining oil. Add the prepared paste. Mix well.

4. Add the powdered masala, chilli, and cumin, Turmeric in the pan. Stir-fry till 2 minutes.

5. Add tomato puree sugar and salt to taste and eggs. Mix well till thick gravy forms.

6. Add the barista, green chillies and garam masala and ghee

7. And, dimer kosha is ready to be served.
