The festival of Modaks is upon us! A Modak is a sweet dumpling popular during Ganesh Chaturthi in Western and Southern India. This time Preetha shows you how to make the batter (or the outer covering) of the Modak on Dakshin Curry.Ingredients:1 cup Rice flour 1/4 cup Nachni (Ragi) flour Salt to tasteOil as requiredWaterWet muslin or table clothMethod:1.Combine the flours, salt and enough water to mix into a thick batter.2. Heat a pan and coat with oil. Remove excess using a tissue paper.3. Add batter and keep mixing till the batter starts to resemble dough.4. Remove on to a greased plate and keep kneading till it's a smooth dough. Use oil if necessary to grease your palms.5.
