The favorite chicken lollipops got a new twist with the Chilli Plum sauce. The chilli adds utter spiciness balanced beautifully with the mild sweetness you get from the plum. DRUMS OF HEAVEN IN CHILLI PLUM SAUCEIngredients8 chicken lollipops1 tsp soy sauce1 tbsp garlic paste3 tsps refined flour (maida)1 tsp red chilli paste1 eggSalt to taste1 tbsp sweet chilli sauce2 tsps vinegarOil to deep frySauce8-10 plums, seeded and roughly pureed1 medium onion2 tbsp oil1 tbsp chopped garlicSalt to taste1 tsp red chilli paste1 cup sugar1 tsp vinegarMethod1. Put soy sauce, garlic paste, refined flour, red chilli paste, egg and salt in a large bowl and mix well. Add 1 tsp water and mix well. Add sweet chilli sauce and vinegar and mix. Add chicken lollipops and mix well.2. Heat sufficient oil in a kadai.3. For sauce chop onion. Heat 2 tbsps oil in a non-stick pan, add onion and garlic and saute till they soften. Add plum puree and mix. Add salt and red chilli paste and mix well and cook on medium heat.4. Deep fry the lollipops till cooked and crisp. 5. Add sugar to the sauce and mix till all the sugar dissolves.6. Drain the lollipops on absorbent paper.7. Add vinegar to the sauce and mix well. Switch off the heat and transfer the sauce into a small bowl.8.
