Dumpukht with Rice

Ingredients for Dumpukht:
Mutton fat 1/2 kg
Mutton 1 ½ kg
Potatoes (medium sized) 3
Tomatoes (medium sized) 2
Onion (medium sized) 2
Green chilies 5
Garlic cloves 7-8
Ginger pod 1 inch
Salt 1 tbsp
Lemon 1
Black peppercorns 1 tbsp
Water 1/4 cup

Ingredients for Rice:
Oil 1/2 cup
Onion (sliced) 1/2 cup
Bay leaf 1
Salt ??
Star anise 1
Cinnamon stick 1 inch
Black cardamom 2
Mutton Stock 2 cups
Water 1 cup
Soaked rice 2 cups

Directions for Dumpukht Preparation:
1. In a handi add mutton fat, mutton, potatoes, tomatoes, onion, green chilies, garlic, ginger, salt, lemon, black peppercorns, water. Cover it with lid and seal the lid from the sides with dough.
2. Let it cook for 2 and half hours. Cut the dough from edges and remove the dough. Your dumpukht is ready to serve. Set aside.
Directions for Rice Preparation:
3. In a pot heat oil and add onion. Cook until starts to turn brown.
4. Now add bay leaf, star anise, cinnamon stick, black cardamom and cook for a minute.
5. Add mutton stock and water and bring it to boil.
6. Add rice and cook until 80% water has been absorbed.
7. Now cover and steam over low flame for 10-15 minutes.
8. Your rice is ready.
9. Now transfer the rice in a dish. Add the prepared dumpukht on top and garnish it with coriander.
10. Your delicious Dumpukht with Rice is ready to serve.
