2 NY strip steaks, 1 1/2-inch thick (about 16-ounces each), trimmed
Canola oil
Salt
2 tablespoons butter
2 cloves garlic
3 sprigs thyme, rosemary or sage (or one of each)
Flaky sea salt, for topping
Freshly ground pepper, for topping
