EASY AND YUMMY POTATO SALAD RECIPE

In this episode, I'd like to share with you, my favorite potato salad recipe. It's so easy to make, and tastes amazing. It is one of our favourite side dishes and it goes well with almost any meal, especially with a fish. Hope you give this amazing recipe a try!

INGREDIENTS
1 kg. (2 pounds) potato
5-6 green onions
1/2 cup finely chopped parsley
1 large lemon
1/3 cup olive oil
1 clove garlic
1 bay leaf
Dried mint flakes
Sweet paprika
Salt & pepper

DIRECTIONS
Peel the potatoes and rinse.
Cut into large cubes.
Transfer into a pan, fill the pan with water.
Add 1 clove garlic, 1 bay leaf, 1 tsp salt and a pinch of black pepper.
Bring to a boil over medium high heat.
Then reduce heat to medium low and cook for 30 minutes or until very tender, leaving the lid slightly ajar.
Meanwhile, finely dice green onions.
For the dressing: Squeeze 1 fresh lemon and transfer into a bowl, you need 1/4 cup juice.
Add 1/3 cup olive oil, a pinch of salt and pepper on top.
Add 1 tsp dried mint flakes and a pinch of sweet paprika.
Mix, set aside until needed.
Check potatoes for doneness, then drain.
Remove the garlic and bay leaf, discard.
Using a fork, mash the potatoes and let cool for about 10 minutes.
Add chopped greens, mix.
Add the dressing, mix well.
Check for seasoning, add more salt if needed.
Transfer into a serving plate, spread and smooth the top, with the back of a spoon.
Garnish with dried mint flakes and sweet paprika.
Cover and refrigerate for about 2-3 hours, then serve.
You can also serve it, the day after its made.
It tastes so good!
