Ham & Swiss Baked Eggs
1 tsp butter or oil
2 large eggs
1 cup ham, chopped
½ cup Swiss cheese, shredded
2 green onions, finely chopped

Preheat oven to 425°F. Lightly grease two ramekins with butter or oil. Divide ham, Swiss cheese and green onion between the ramekins. Create a small well in the centre of the ingredients. Crack 1 egg into the well. Repeat in the second ramekin. Season eggs with salt and pepper. Bake for 10 minutes or until the eggs are cooked to your liking. Garnish with more green onion. Serve immediately.
