Fluffy Pancakes:

Combine 1 cup of milk of choice (I used unsweetened almond) and the zest of one whole unwaxed or organic lemon. Squeeze in the juice too. Dont skip this acid as it helps to tenderize the pancakes.

Add in 1 teaspoon pure vanilla.

In a separate bowl, combine a cup sugar (brown sugar is nice but I used raw sugar) to 1 cup unbleached flour, 1 teaspoon baking powder, teaspoon baking soda, and teaspoon salt.

Whisk the dry ingredients before blending in the wet ingredients.

Stir gently - dont overmix. A few lumps are not just fine but ideal.

Allow the batter to rest for 15 min at room temperature before cooking with whatever add ins youre feeling. I cook mine in grape seed, coconut or avocado oil (butter is best saved for the topping/serving so it doesnt burn) and popped in blueberries.

We seared our scallops as we dont have access to fresh ones on the island but we also top it with sashimi lion fish and you can adjust it to your hearts content.
