Easy Homemade Chicken Soup Recipe for Soul | Eat East Indian

If you ever get sick and want to just have some good ol' homemade chicken soup without any preservatives then give this simple recipe a try. My version of Hearty chicken soup can be easily customized to suit any taste or budget :) Use whatever spices you have on hand and store the leftovers in an airtight container. This soup freezes well too.

Ingredients/ Method

2-3 tbsp oil
1 large onion
3-4 cloves of garlic
350 gms of Chicken
1-2 large potatoes
2-3 carrots
Spices - 1 bay leaf
Salt per taste
1 tsp paprika
1 tsp oregano
2 tsp parsley
1 tsp sage
1/2 tsp pepper
4-6 cups of water

1. Heat oil in a pan/wok and saute onions, garlic and veggies. I am using potatoes and carrot.
2. Add chicken in slowcooker. Add sauteed ingredients. Then add spices and water and cook on high setting for 4 hrs.
3. Serve with sandwich of your choice.
