Shankarpali or Shakkarpara or Shankarpaada is an Indian snack popular in orth and Western India, especially in Gujarat and Maharashtra. It is traditionally enjoyed as a treat on special occasions. It is rich in carbohydrates, making it an instant source of energy. In Gujarati it is called Shakkarpara (સક્કરપારા), in Marathi it is called Shankarpali (शंकरपाळी), in Bengali it is called Shakerpara (সাকেরপাড়া), in Urdu/Hindi it is called Shakarpare (शुक्र पारे/شکر پارے). Dissole sugar in water and add it in flour to make a stiff dough ( tight/ firm not loose..that doesnt mean dough has to be dry)Next heat oil for frying.Take small portion of dough and flatten it out to desired thickeness. Cut it into small squares and fry them until they are golden brown ( on medium heat)Let them cool down completely and then store in an airtight container.
