Easy Okra Curry Recipe (Besan Wali Masala Bhindi) | Eat East Indian

Here is an awesome recipe for Okra curry - Besan wali bhindi..It's easy to make, doesnt take too long and is super yum. Serve it with your favourite flatbread or as a side with rice and lentils.

Ingredients and method:

750 gms of Okra
2-3 tbsp oil
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1 tsp red chilli pwd
1tsp turmeric pwd
4 tbsp chickpea flour/Besan/ Gram flour
1/2 cup chopped onion
small piece of ginger-garlic chopped ( or 1 tbsp ginger garlic paste)
1-2 tsp amchur/ Dried Mango Powder
1.5 tsp salt
2 small chopped tomatoes

Method:
- Wash and ry Okra and remove the end parts. Cut it in two halves and set aside
- In a pan/wok, add 2-3 tbsp oil and fry cumin, mustard, red chilli pwd, turmeric and chickpea flour. roast chickpea flour for 2-3 mins.
-Mix in onions and ginger garlic.
- Fry for another 2-3 mins. Add okra and mix well. Add salt and mango powder. Mango powder ensures that when you cover okra, it doesnt turn too slimy.
- Cover and cook for 5 mins. Once a bit tender, add tomatoes. cover and cook for 5 more mins then remove the cover and cook until completely done and tender.
- Add garam masala and cilantro and serve warm with Roti.
