1/3 cup (28 g) Dutch process cocoa powder
2 teaspoons espresso powder
1/4 cup plus 2 tablespoons (75 g) olive oil, plus more for greasing
1 cup (213 g) dark brown sugar
2 teaspoons vanilla extract
1 tablespoon apple cider vinegar
1 teaspoon baking soda
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1 1/2 cups (180 g) all-purpose flour, plus 2 tablespoons for dusting the pears
2 cups (270 g, about 1 medium) pears, skin on, cored and diced into -inch pieces
confectioners sugar, for dusting
