Easy spaghetti Carbonara recipe - healthy and super quick - vegan -The Happy Pear & Tim Shieff

This is a super easy spaghetti carbonara recipe. We teamed up with the wonderful Timothy Shieff, World Parcour champ and vegan athlete to make a yummy homemade spring greens pesto, a great variant for a regular basil pesto.
Wonderfully tasty and pairs great with almost anything! This Recipe feeds between 4-6 people and is guaranteed to please!

Here's what you'll need:

100g Spring Greens (We used Cabbage)
Juice of 1/2 a lime
2 teaspoons of Salt
100g Roasted Cashews
3 cloves of Garlic
200ml Sunflower oil

Optional:
Pinch of Chilli Flakes
Pinch of Peppercorns
