Easy tea time snack recipe - the famous bread pakora/bajji with added joy of succulent paneer, spicy and tangy green chutney. Recipe includes instructions for making the pakora/bajji batter from scratch.

Serves 6 - 8 people

INGREDIENTS:
1. Bread slices - 8 to 10
2. Paneer - 200gms

For batter:
3. Gram flour - 1 cup
4. Rice flour - 1/2 cup
5. Kuzhambu chilli powder - 1 tsp
6. Turmeric - 1/4 tsp
7. Black pepper powder - 1 tsp
8. cumin powder - 1tsp
9. Carom seeds (Omam) - 1/4 tsp
10. Salt - 2tsp or to taste
11. Water - 1 cup or as required

For Chutney:
12. Mint leaves - 2 handful
13. Green chillies - 3 or 4
14. Ginger - 1 inch piece
15. Lemon juice - 1 tbsp
16. Salt - 1 tsp

17. Oil - for frying

TIPS:
1. Prepare the chutney just before making the pakoras/bajjis as otherwise, the chutney will release water and become dark in colour.
2. Add or reduce green chillies based on your requirement. You could reduce the chillies if kids will be consuming the bread paneer pakora/bajji.
3. The batter should not be runny. Ensure it is a bit thick as shown in the video.
4. Ensure the batter is without lumps.
5. Rice flour gives the crispiness to the pakora/bajji.
